I've noticed that since I started making juice, I seem to be eating less. So I did some calculations for today, and was surprised:
May 19th 2011
Juice -- 3 cups watermelon, 2 cups cucumber, 1 cup orange
8 kumquats
Apple Stuffs -- 7 walnuts, 1/4 cup oats, sprinkle of seeds and coconut shreds, 1 date, 2 apples, 1/4 cup spinach
Half a carton of coconut-juice, mango-peach juice
Juice -- 2 leafs of chard, 1/4 cup spinach, 3 Clementine-oranges
Nori rolls -- 2 sheets of nori, half an avocado, 2 cups of spinach, 5 leafs of lettuce, 2 spoonfuls of flax oil, 1/4 cup of kim chi (home made), 1/3rd of a tomato, 4 spoonfuls of minced onion, sprinkle of home-made dehydrated vegetable crackers, pinch of celery salt
Calorie count:
From vegetables: 85 calories, 2 from fat
2 leafs of chard: 10 calories, 1 from fat
5 leafs of lettuce: 7 calories, 1 from fat
2 and 1/2 cups of spinach: 33 calories
1/4 cup of kim chi (home made): 15 calories
2 sheets of nori: 20 calories
From fruits: 788 calories, 67 from fat
2 cups of cumber: 32 calories, 4 from fat
3 cups watermelon: 120 calories
2 clementines: 70 calories
8 kumquats: 104 calories, 8 from fat
1/4 cup oats: 95 calories, 16 from fat
coconut shreds sprinkle: 40, 23 from fat
1 date: 48 calories
2 apples: 140 calories, 10 from fat
Half a carton of coconut-juice, mango-peach juice: 60 calories
3 Clementine-oranges: 105 calories
1/3rd of a tomato: 10 calories, 1 from fat
4 spoonfuls of minced onion: 8 calories
misc: 50 calories, 5 from fat
From fats: 449 calories, 403 from fat
half an avocado: 140 calories, 117 from fat
sprinkle of seeds: 57 calories, 41 from fat
1.5 spoonfuls of flax oil: 200 calories, 200 from fat
7 walnuts: 52 calories, 45 from fat
Total: 1322 calories, 472 from fat
Fats: 35.7%
Fruits: 58.1%
Vegetables: 6.2%
I'm aiming for an 80-10-10 diet, where 80% of my calories come from fruit, 10% come from vegetables, and 10% come from fats. As you can see, despite eating a lot of vegetable in terms of the amount, it doesn't reach 10% yet. Also, despite eating very "little" in the fat category, I exceed 10% today by a lot.
I have calculated my calories in a day before several times, each coming to approximately 2100 calories for the day, so my thinking that juice was somehow making me crave less food is correct. I've felt full of energy and vibrant all day, and yesterday. I think I do feel better by drinking juice as opposed to eating, eating, eating.
I would have expected to desire more calories on a juice diet, but I guess not. This month-long juice feast is going to be an interesting trial indeed.

Cucumber & Blackberry Salad
To my disappointment, I was not able to make anything special for Christmas. I injured myself on my first attempt skiing in Tahoe with my husband's family on Christmas Day and I spent the next following days sleeping. This is the very next photo of food I took after the photos I took Christmas Eve, and it's on the 27th. It's a salad my husband made me while I was still in bed at the lodge in Tahoe.

Christmas Eve Salads
I made the following salads for my brother in law Justin, my parents in law, Victoria and Jim, and for myself and Jay, my husband. We scarfed these down before heading out to Sacramento on Christmas Eve.

Fourth shelf: More of the first shelf and third.
Lots of apple slices; it makes a time consuming gift to make, but oh-so-tasty
